Inspiration: Inspired from several amaro cocktails, I wanted to play up the citrusy notes in all of these spirits to come up with something both bittersweet and bright. Also inspired by the bourbon and grapefruit in a Brown Derby cocktail, “Pamplemousse” was a thoroughbred racing horse, and I named the drink after a race he contended for.

Ingredients
- 1.0 oz Spring 44 Bourbon
- 0.75 oz Averna Amaro
- 0.75 oz Combier Pamplemousse Rose Liqueur
- 0.75 lemon juice
Method
Combine all ingredients in a tin, shake, strain, serve up in a coupe.

Ginger beer
Build cocktail in a highball glass and top with ginger beer. Garnish with a lemon wheel.
